Ingredients field problem

I have a recipe PHP script with a lot of fuctions in one file! I was just
wondering. I have a Ingredients field, which people will be adding recipes.
But in this field, I can't just have people doing \' or \", or <P> or
<br>, Is
there a way to get rid of that stuff? I'm using MySQL, so if you have an
answer please tell me.
