Add/Strip Slashes

I'm confused by the behavior of my ODBC connection in regard to adding single slashes.
Do all I need to do is a single AddSlashes call to any data i put into the DB, and a single
RemoveSlashes on all data I get out ? What about data that is already in the DB which has'nt
had an addslahes in it?
