./configure --with-mysql --with-imap --with-apache=../apache_1.3.12 --enable-track-vars

Have you compiled and installed imap-library like said in:
http://www.php.net/manual/ref.imap.php
??
Try adding the path to the install path of imap into --with-imap.
For example:
--with-imap=/usr
This is valid when the include files (*.h) are in '/usr/include' and library
(c-client.a copied to libc-client.a) is in '/usr/lib'-directory.
