ORBit handles IIOP for me.

(Btw: I'm not a CORBA expert either :-)
I use the IDL files to know what data types the server expects, how many
parameters a function can take, what members exist in interfaces and structs,
etc.

It's no use to work at socket level when the ORB provides higher level
functionality.
