That's not correct mail header (see RFC822, STD3).
Right way is:
mail("nobody@example.com", "the subject", $message,
"From: <webmaster@$SERVER_NAME>\r\n"
."Reply-To: <webmaster@$SERVER_NAME>\r\n"
."X-Mailer: PHP/" . phpversion());
