I haven't used that function yet, but have you tried:
<select name="interests[]" multiple size=2>
<option>value 1</option>
<option>value 2</option>
</select>

I have a form which the follownig select
<select name="interests" multiple size=2>
A user can select any number of options, but when I read the variable
$interests, it only displays the LAST item selected by the user.
Is there a way to read the entire list? I would have thought that it might
be
an array but if that was the case it should print the word Array when I do
an
echo on $interests.
Please respond to my email address since I cannot handle the volume of this
list.
