Are you sure the message is not stuck in the mail queue for some reason? Did you do mailq to see if it is still there? If it isn't and it bounced it should have gone to that $email address. If you set to foo@bar.net, you will not see the bounced message and will probably miss the reason why it bounced.

Try setting mail() 5th argument to "-f$email".
