Carriage returns in mail

In using the mail function I'm noticing a big difference in formatting if the email is received through a Windows based POP server as opposed to a Linux based pop server. for example, in the body of my email if I use '\r\n\ to delimit lines, the windows pop server sends it to me just as I would expect. But the Linux box, the body all runs together. If I use just > plain '\n\, the formatting is acceptable on the windows server (except the spacing is a bit off on each new line) but for the section of the body that came from a form field, the carriage returns in the variable do not come through from the Linux pop server, but they do from the windows pop server. Using php4/Apache/Linux is where the code is running, and I'm sending out two emails. One account resides on a windows NT machine, and the other is from the Linux machine I'm sending the emails from. Can somebody help me out with what I need to do to format this email so it retains carriage returns and is formatted properly?
