Dunno the original question, but this obviously should be escaped...
So the correct code follows...
usort($authors, create_function('$a,$b','
$a = str_replace(array(\'é\', \'a\'), array(\'e\', \'a\'), $a);
$b = str_replace(array(\'é\', \'a\'), array(\'e\', \'a\'), $b);
return strcasecmp($a,$b);'));
