Try this:
$mailHeaders = "From: $email\n";
$mailHeaders .= "MIME-Version: 1.0\n";
$mailHeaders .= "Content-Type: text/html\n";
$mailHeaders .= "X-Header-Type: HTML\n";
Notice the "newline" breaks.
