This is how I do it:
$FONTS['body'] = '<FONT COLOR="red">';
Or just a bunch of HTML in a varible:
$foo = 'a bunch of html - still have to escape \'s';
Or just in a function:
function bodycontent(){
?>
<a href="http://www.yahoo.com">Yahoo!</a>
<?
}
