The easy way,
Install sendmail from the Linux distribution, with a simple Internet
configuration.
DO NOT start it as a daemon, so it won't be listening on port25.
It will be on the machine, and able to be executed by PHP when it wants
to send email, but no one outside of the machine can get to it. Even
though I am a Qmail user, this is what I do on my web servers because
it is so much easier/smaller than a full Qmail install.
The hard way.
Find or write a script that knows how to connect to your mail server by
opening a connection on port 25, and sending mail. I know there are
some around, but they don't use mail().
