Why not put the phpinfo() page in a directory that requires a username and
password. This way the people you want to see it can see if. One username
and one password would do the job for everyone.

people an idea of what they get. I seem to answer a lot of mail from
prospective clients who need to know how php (among other things) was
compiled, and I know that the phpinfo() page would answer 90% of thier
questions. What should I edit out, if I were to just copy the HTML generated
by phpinfo() and post that?
