Seperating data from form into two tables

I'm pretty new to PHP and i'm hoping someone can help me out.
I've looked through a couple of books and haven't been able to find out
how to take data from a form and insert it into two tables. For example,
I have a client and an interests table and data comes from the same form.
I've been working on this on/off for a day and haven't been able to figure
out how it works.
My question is:
1. Do I need to open two database connections (one for inserting clients
and one for inserting data into interests)
2. Is it recommended that I do this insert with two functions or does it
matter?
I'm hoping someone can help me out. I've posted my PHP script at
