I doubt the problem is NameVirtialHosts. I am running PHP 4.0, Apache
1.3.12 on Linux, with no problems. What else changed in your apache
config files?
What happens with .html files, and what happens if you comment out the
AddType statements for php3? (You should see the document source sent
to the browser.)
