are you running php in safemode?
according to
http://php.net/manual/en/function.unlink.php
unlink() may not work with windows servers, I have no personal experience
with windows so I can not confirm this.
have you tried
http://php.net/manual/en/function.move-uploaded-file.php
this might be better suited.
