qmail comes with a sendmail wrapper, so you may want to use that with:
sendmail_path = "/path/to/qmail/sendmail -t";
To alter the From/Reply-to, use the optional 4th argument to mail():
$headers = "From: whatever@youlike.com\r\n";
$headers .= "Reply-to: whatever@youlike.com\r\n";
$headers .= "X-Powered-By: PHP Mailer by Boucey\r\n";
mail($to, $subject, $body, $headers);
