This is because you have magic_quotes_gpc set to ON, this setting can be
read about here :

http://www.php.net/manual/en/function.get-magic-quotes-gpc.php
Which, as you'll read about, adds the quotes automatically. Also, have a
look here :

http://www.php.net/manual/en/function.stripslashes.php
It will make sense.
