Forget about the PHP functions and do this:
$query = "INSERT INTO tablename ";
$query .= "SET field1 = '$field1', ";
$query .= "field2 = '$field2', ";
$query .= "datesubmitted = NOW();
Let MySQL simply do this for you with the NOW() SQL command.
