MAIL function problem....why the exclamation points?

I have an order entry system that uses the MAIL function to send
completed orders to the customer for processing. The body of the
e-mail contains the order, but I'm getting exclamation points (!) plus
a carriage return every 1030 to 1040 characters in the body of the
e-mail. The email is usually a little less than 3,000 characters, so
I'm getting TWO exclamation points (and carriage returns) after about
1,000 characters, and then again at around 2,000 characters. Those
exclamation points make it difficult to have an automated system that
parses the contents of the e-mail.
The body of the e-mail contains field name/value pairs like this:
Order number A00000001
Name Mr. Confused
Address Some Address
....etc.
....etc.

The "Residence" field is getting split on two lines with an exclmation
point and carriage return in the middle of the field.
Has anybody else experienced this problem? I changed my script to
examine the built text string for exclamation points, but it appears
to be OK until the time I call the "MAIL" function. Do you guys &
gals think this is a PHP problem, or an e-mail problem?
