Use the header field in the mail function:
$header ="From: <fromme@nowhere.com>\n>";
$header .="X-Sender: <sender@nowhere.com>\n";
$header .="X-Mailer: PHP\n";
$header .="Reply-To: <replyto@nowhere.com>\n";
$header .="Return-Path: <return@nowhere.com>\n";
...
mail($recipient, $subject, $message, $header);
