getting rid of HTML in output

I have a mail form script that I am working on and if you enter HTML into the any of the form
fields, it spits it out on the output page as HTML. How can I get rid of the
"<HTML>" part of messages so that it won't mess up the output? I think all I
need to do is to conver the "<>" to < and >...any easy way to do this?
