I figured this one out, so I thought I'd put it in the archives ...
I just spent a few hours pulling my hair out because the mail sent by mail() was coming from
'unprivileged user' on my freebsd box. It worked fine for another site on the same box.
It turned out that I has mistakenly appended a newline to the subject line, and that hosed the
headers.
