You need the methods to be in the gtk+ extension's defs files before you build, and those are generated from the GTK+ source using a python script (generator/h2def.py).
Note: since the defs files are retained in CVS, you're definitely taking a walk away from 'standard distro' here. (I wasn't thinking earlier, obviously!)
