If you extract an array with keys containing ASCII charsacters 127 - 255 (é, à , ...)the
correspondig variables do not get created! This migh be a bug.
For example
$my_array['hébergement'] = 'test1';
extract($my_array); // this is not working right!
var_dump($hébergement); // gives you nothing!
$hébergement = 'test2'; // this is right
var_dump($hébergement); // gives you 'test2' value
