You can use multiple asterisks with the glob() - function.
Example:

$paths = glob('my/*/dir/*.php');
?>
$paths will contains paths as following examples:
- my/1/dir/xyz.php
- my/bar/dir/bar.php
- my/bar/dir/foo.php
