As noted above sendmail_from is only used on MS Windows, to change the default sender on unix you
must add -f to sendmail_path. For example in a <VirtualHost> directive:
php_admin_value sendmail_path "/usr/sbin/sendmail -t -i -f webmaster@example.com"
would set the default return-path for mail from that virtual host.
