With the $HTTP_COOKIES, it's not a variable, but an associative array. If you have bar=bar321
and foo=foo123 set as cookies, then $HTTP_COOKIES would yield something like this:
$HTTP_COOKIES = array(
foo => 'foo123',
bar => 'bar321'
);
and not an actual string. If you used:
echo $HTTP_COOKIES;
it would most likely print to the browser "Array" rather than "foo=foo123;
bar=bar321".
At least, that's how I understand the $HTTP_COOKIES variable.
