I have just found out a nice and short way to convert an existing document on the server to UTF-8. I
share it here maybe someone needs it:
$utfconvert = file_get_contents("original.xml");
$saveit = fopen("converted.xml","w");
fwrite($saveit,utf8_encode($utfconvert));
fclose($saveit);
