MAKE SURE your server's php.ini file has the "sendmail" variable set. I continue to
forget this point until sendmail mysteriously seems to not work after the mail() function returns
just fine.
on UNIX, it's:
/usr/lib/sendmail -t
..don't forget the -t --it caused me another hour of cluelessness.
