Would have to do this:

echo $fruits[0]; // will echo 'apples'
};
$example();
?>
Or this instead:

$fruits = ['apples', 'oranges'];
$fruit = $fruits[0];
$example = function () use ($fruit) {
echo $fruit; // will echo 'apples'
};
$example();
