I have found that this coding works relatively well.
$to = "MYEMAIL@SERVER.COM"; // recipient
$subject = "SUBJECT OF EMAIL"; // subject
$message = "BODY OF MESSAGE"; // message
$headers = "MIME-Version: 1.0\r\n"; // headers
$headers .= "Content-type: text/html; charset=iso-8859-1\r\n";
$headers .= "To: <MYEMAIL@SERVER.COM>\r\n";
$headers .= "From: <FROMEMAIL@SERVER.COM>\r\n";
mail($to, $subject, $message, $headers); // do the work
