Just saw the other comments on exim and the sendmail_path things.
If you are like me and have for example an squirrelmail running on the box with exim as smtp server
you can modify exim.conf and set www-data (which ofcourse is the webserver user) to the
trusted_users handle:
trusted_users = www-data : someotheruser
(or the trusted_group)
Just be aware that any process of the web server can now change the headers of the mail it sends via
your exim process. Normally this is no special security implications if you trust your box/users.
