John is a literal. Use quoteSmart() for that.
Employee is an identifier. Use quoteIdentifier() for that.
The following two passages are from the respective pages in the PEAR DB
manual
"Literals are values such as strings or numbers which get utilized in
places like WHERE, SET and VALUES clauses of SQL statements."
"Identifiers are objects such as table or column names."
