Modify Default QuickForm Template

After almost 2 hours, I admit defeat.
How do you change the the form template without going into HTML/QuickForm/Renderer/Default.php file and adjusting $_headerTemplate, $_elementTemplate, $_formTemplate and $_requiredNoteTemplate?
I've looked in the HTML/docs/renderers directory and looked and tried the examples and there is something obviously quite simple that I cannot seem to grasp. The frustrating thing is that a few months ago when I was puttering around, I quickly and easily grasped the programming required to adjust the templates, but now that I'm going back and working at producing something for a client, I cannot for the life of me figure it out.
