Doug,
You can try --with-iodbc if you like, there is a howto at www.iodbc.org.
That being said, I think that you simply need to set LD_LIBRARY_PATH to
the location of your ODBC SDK, so the .h files can be found.

well.... i figured i'd try it...
i run
$ ./configure
i386-redhat-linux --sysconfdir=/etc --with-unixODBC=shared
