determining all the variables defined on previous pages

Greetings.
When using the following code, how can I determine which values have been
assigned by my form? Is there a way to determine ALL the values defined by
this form and posted to the next page?
Here's my code:
while ($row = mysql_fetch_array($result)) {
$current_quantity = "Q" . trim($row[product_id]);
echo "<tr><td align=\"center\"><input type=text size=5
name=\"$current_quantity\">" ;
......
and when using it, I'm having trouble accessing my values (I've used this
code before but this time I can't get it to work).
