Setting The Font In SENDMAIL

Since so many people are now using MS Outlook for their e-mail which defaults to a proportional-width font (and I think newer Eudoras do too), I've found times that I need to specify a fixed-width font (IE Courier, Courier New) in so that columns of financials line up. How do I do this with dynamically created data generated and mailed out with a PHP script?
