Elizabeth- Tried out the 2.18 binaries, and that helped with nearly all of it. Still have issues with button accelerators, but that's much less of a problem than entry fields w/o content or vanishing labels. Unfortunately this is apparently a gtk+ library error - https://bugzilla.gnome.org/show_bug.cgi?id=601840 Let me see what I can figure out- at the very least I can roll a patch so they do it right. If you have time, if you could try dropping newer gtk libraries over top for gtk 2.18? Gtk has really picked up development speed lately and hopefully some of those issues have been fixed.
