UltraEdit rocks, if you're willing to pay $20. Does plain text as default, doesn't try to
add .txt extension, converts between Unix and DOS formats, and has syntax highlighting for lots of
lanugages (including PHP, of course). I've been using it since 6.1 (now at 10.2) and loved
every version.
