The paradox here is that the official stable package is PHP4.1.2. Only the
testing (v4.3.4) and unstable (v4.3.8) releases has actual recent bugfixed
(and thus hopefully more stable ;-) versions of PHP...

Just drop "deb http://packages.dotdeb.org ./" in
the apt's sources.list ;-).
It actually works fine, but I'll recommend the use of the CGI version, since
PHP4 and PHP5 can the coexist...
Just add the following lines in httpd.conf
Action php4-cgi /cgi-bin/php4
Action php5-cgi /cgi-bin/php5
# Allows easy switching between php versions by changing a symbolic link to
either php4 or php5.
Action php-cgi /cgi-bin/php
You can then switch to the CGI-versions on the .htaccess level by adding:
AddHandler php5-cgi .php
