I solved with:
$azione =& $form->addElement('hidden', 'azione', 'Modifica');
$azione->setValue('Modifica');
but I'm still wondering why 'zione' works and 'azione' doesn't...
I'm using method setDefaults(), but I don't think that it's related,
since the other fields work.
