Hi!

If I call the hidden field "azione" or "action", the field is empty:

All other fields (including two other hidden fields) are working correctly.
Is there a reason for that? A workaround?
I suspect that you are passing a parameter named 'action' or 'azione' to the script, and when you add the field to the form its value gets updated to the (presumably empty) submit value. This is expected behaviour.
The solution is either to use setConstants() or to pass a special parameter to QuickForm's constructor that will check whether the form was actually submitted.
