cannot get mail() to function on IIS5 / Win2000

When I attempt to execute the following code

echo "Sending Email...";
$emailaddress = "phobo@paradise.net.nz";
$subject = "php emailing demo";
$message = "Welcome to the demo\nLine Two\n\nLine Four etc\n";
$headers = "From: automatedform@hehe.com\n";
mail($emailaddress,$subject,$message,$headers);
echo "...done";
?>
I get no response from IE5. After about two minutes i see "Sending Email..."
and then IE5 gives up. I assume that mail() is caught up doing something and
timesout and finally sends the echo to the client. I have tried playing with
php.ini as follows, but neither works
SMTP = localhost
sendmail_from = me@localhost.com
and ..
SMTP = smtp.paradise.net.nz
sendmail_from = phobo@paradise.net.nz
Do I need to set up a SMTP server or something else with PHP ? are there
IIS5 setting which I need to alter?
I have a firewall I use but out of desperation I disabled it to see if that
was the problem, and it wasn't...
Any replies would be appreciated incredibly!
