Set it to the SMTP server you use for your email, i.e. if your isp is
bigisp.net and their outgoing email server is smtp.bigisp.net, set it to
smtp.bigisp.net.
You'll have to put the email address you want it to come from in the
PHP.ini as well.
Don't forget to restart your server for the php.ini settings to take
effect.

Hard work may not kill you, but why take chances?
