SESSION_ID / SESSION-START

Hello, Does anyone know how to close a session? In my e-commerce site I make a session with session_start(); People can shop with their own session_id. After paying, the shoppingbasket is getting deleted, but what when they shop again? I want to give them a new session_id! How to end the session and give a new one? Now I give every page the header 'session_start()'.... Who knows???????
