It would allow you to easily change your database if you need too, by not
referring to mysql_* calls directly. It allows for greater portability of
applications to different environments. For example if you developed on
windows using an Access ODBC datasource you can easily deploy on Unix using
mySQL. Or if your site for some reason needed transactions, which mySQL
doesn't support, you could easily move your site to an Oracle or Sybase
backend.
