start with a blank script, and write a simple form thing to test out the
$_POST array. It's good to separate the noise out and just focus on the
problem. If you can get a simple form working, then there's a problem with
the script, otherwise there's some strange shit happening on the server, or
in PHP.ini
If you can, then try for a simple session, then try and look at your code
again.
