Well, lets assume that what you really want to do is to update PHP, not
uninstall it.
If you have installed it as a DSO, all you need to do is re-compile PHP
with the different options you want, install it with make install, then
restart Apache to read the new PHP.
If you have installed it as a static module, you need again to re-make
PHP and install it, but you also need to recompile and install apache.
Both methods are well documented.
