You could use session variables to determine if the user already
pressed the "buy it" button within a certain amount of time and
present them a warning/error if the try to press it again within
a limited period.

You cant, your best option is to say on the button (Click Here to confirm
order - after this point you cannot stop the transaction) or somthing
similar then register ignore_user_abort() so that the transaction does not
stop when they abort.
